This week, we’re peeking into the fridge of New York-based health coach, and the co-founder and CEO of Embody Wellness Company, Stephanie Rapp.
Splendid Spoon: Hey Stephanie! Tell us a little bit about yourself.
Stephanie: Hi Splendid Spoon! I’m 30, from New Hampshire, and live in the Big Apple. I’m based in Tribeca with my husband and two small kids, Olivia, 2, and Cullen, 10 months.
Before starting EMBODY Wellness Company, I worked at Goldman Sachs for eight years. I’ve always been passionate about wellness, travel, food, fitness, sustainability, wine, family, and entertaining. I truly believe you can live an adventure-filled life and still feel (and look) your best. Maybe you can’t have everything at once, but you can have it all over a period of time.
Now I’m working on building EMBODY Wellness Company with my business partner, Christine. We are a holistic wellness and lifestyle concierge. We work one-on-one with clients and in corporate or group settings to help people accomplish their health goals. From weight loss to stress management, having a healthier home or a more nourishing lifestyle, we’ve got you covered!
I can also often be found taking my kids to gymnastics, ballet, music, and soccer classes, hosting wellness events, breaking a sweat at a local studio, shopping at the farmers’ market, having dinner with friends, and joy walking around NYC with two littles in tow!
SS: What are the 5 staples you can’t live without?
SR: The top four are avocado, eggs, chia seeds, and avocado oil. Can the fifth be all my vices rolled into one? Ice cream, coffee, and good red wine.
SS: What’s the weirdest thing in your fridge?
SR: This changes a lot! I used to make my own kefir [A fermented milk drink, packed full of probiotics. — Ed.], which is pretty unusual. My husband would probably say it’s my smoothie staples: chia seeds, ground flaxseed, hemp seeds, aloe vera, spirulina, ghee, and probiotics. I also have some fabulous farmers’ market finds: yu choy [a leafy green often used in Chinese cooking. — Ed.] and Japanese vitamin greens [The clue’s in the name! These are another type of vitamin-rich leafy green. — Ed.].
SS: What’s your fave sweet and what’s your fave savory?
SR: Sweet is ice cream, savory is roast chicken.
SS: If you were one thing in your fridge, what would it be?
SR: I’d be a chia seed — they may be little but they pack a big nutritional punch! The more you learn about them the more you love them. They add so much to so many different things, have a pretty long shelf life, absorb a lot, and make you feel satisfied!
SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
SR: I have a few foods I go to in these situations! Roast chicken and root veggies; homemade chicken soup; a big bowl of popcorn with melted ghee, himalayan sea salt, spices and fresh grated parmesan cheese; and red wine!
