This week, we’re peeking into the fridge of mom, marathon runner, aspiring vegan, former Army Reservist, and journalist, Shon Gables.
Splendid Spoon: Hey Shon! Tell us a little bit about yourself.
Shon Gables: Hi! I’m a mom to two boys and a baby girl (well, she’s seven now, so I guess not so much of a baby!), journalist, and runner. I love running as much as I love reporting. My poor eating habits were encroaching on my ability to do both successfully, and that’s when I discovered Splendid Spoon.
I hate to cook (and my family hates my cooking), so there was only so much I could do on my own. Thankfully, my husband can cook, but I was looking for something just for me. This isn’t me being selfish. If I’m not healthy, I can’t be the best mom, news anchor, or athlete. I want to set an example to others in every aspect of my life, and I needed to change my eating habits so I could do this. Splendid Spoon has been a game-changer for me!
SS: What are the 5 staples you can’t live without?
SG: Alkaline water, kombucha, cashew yogurt, chocolate, and goat cheese.
SS: What’s the weirdest thing in your fridge?
SG: Eggnog. It’s my weakness. Thank God it’s only around during the holidays!
SS: What’s your fave sweet and what’s your fave savory?
SG: I love strawberry jam, especially on warm wheat-free bread! My favorite savory is definitely really good puttanesca sauce with extra capers (Ed Note: We share the love. It might explain our new Zucchini Puttanesca) .
SS: If you were one thing in your fridge, what would it be?
SG: Goat cheese. You either love me or hate me. No in between!
SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
SG: For me, comfort food is a medium rare steak with homemade mac and cheese. I am trying my best to create new, healthier nostalgic memories. It’s hard to go vegan when you still crave steak, but I’m trying!
My new go-to is toasted Ezekiel bread with honey butter. Yes, I know, I’m a work in progress. But I truly believe that balance is everything!
