We may eat a lot of plants, but you better believe there’s a whole lot of variety, and a bit of naughty, going on behind closed doors. We know you want a peek ;).
This week, we’re peeking into the fridge of mom and vlogger, Jeni.
Splendid Spoon: Hey Jeni! Tell us a bit about yourself.
Jeni: Hi! I’m a busy, mid-30s, work-at-home mom to two crazy boys. We’re a very active family and enjoy spending our free-time playing sports, traveling and exploring. I find a lot of satisfaction in organizing, cooking, and even cleaning!
SS: What are the 5 staples you can’t live without?
J: Almond butter, tea, chocolate, bell peppers, and cheese
SS: What’s the weirdest thing in your fridge?
J: Pickled garlic.
SS: What’s your fave sweet and what’s your fave savory?
J: My favorite sweet would be super gooey brownies… I love to undercook them, freeze them, and eat them frozen (you’re welcome!).
My favorite savory would be crinkle-cut kettle-cooked potato chips, dipped in onion dip. It’s best that I don’t buy them!
SS: How do you bring mindfulness to your eating habits?\
J: The more effort I put into a meal, the more mindful I am of the meal. Researching recipes, buying the ingredients, and then preparing the meal allows me to slow down and appreciate the work that goes into it.
SS: If you were one thing in your fridge, what would it be?
J: Almond milk. It has a long shelf life (endurance), is very versatile (hello, multitasking), and can be sweet.
SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
J: This has to be a toss up between mac and cheese and any of the cookies we baked during the holidays as kids.
