This week, we’re peeking into the fridge of moms, bloggers, and YouTube stars, Christina & Katie Bailey.
Splendid Spoon: Hey ladies! Tell us a bit about yourselves.
Christina & Katie: Hi! We’re a married couple with two daughters. We lead very busy but very fulfilling lives, and love sharing our family life on our YouTube channel.
SS: How do you bring mindfulness to your eating habits?
C&K: As working moms to two little ones, it’s hard to find time to sit and relax for a moment. We’ve found that mealtimes are our chance to be mindful. When we sit down together as a family, we give ourselves a moment to truly taste the food we’re eating, and take a few deep breaths to enjoy this moment together.
SS: What are the 5 staples you can’t live without?
C&K: Avocados, bell peppers, jackfruit, dark chocolate, and almond creamer. Not together, obviously!
SS: What’s the weirdest thing in your fridge?
C&K: Our leftover estrogen injections from when we did IVF. Now that I think of it, I’m not sure why it’s still in there, seeing as our youngest is five months old.
SS: What’s your fave sweet and what’s your fave savory?
C&K: Favorite sweet is dark chocolate bark. Favorite savory right now is veggie sandwiches with cauliflower pesto.
SS: If you were one thing in your fridge, what would it be?
C: Katie would be a cucumber because she’s as cool as a cucumber.
K: Christina would be maple syrup because she’s so sweet.
SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
C&K: Our nostalgia food would be almond ice cream by the pint. Before kids, we’d spend our Sunday mornings eating pints of ice cream in bed. Yes, it’s weird to eat ice cream in the morning, but don’t judge. Whenever we need some comfort food, we both grab our pints and a blanket.
