This week, we’re peeking into the fridge of fitness professional Erin Bailey.
Splendid Spoon: Hey Erin! Tell us a little bit about yourself.
Erin: Hi Splendid Spoon! I’m a fitness professional based in Boston. I teach boxing and HIIT classes, and I run an online training program designed to empower women to get active again! I’m currently training for the 2017 Boston Marathon, which I’m running for Horizons For Homeless Children — I’d so appreciate your support!
Outside of fitness, I love dancing to live music, wearing jean-on-jean with a side of fringe [love this look! — Ed.]., and eating and drinking all things coffee (especially coffee ice cream).
SS: What are the 5 staples you can’t live without?
EB: Unsweetened vanilla almond milk (I need to start making my own!), freshly ground almond butter, salsa, sweet potatoes, and Justin’s dark chocolate PB cups. Choosing just five was hard!
SS: What’s the weirdest thing in your fridge?
EB: I feel like anything weird is somehow now everything trendy! As in, apple cider vinegar used to be weird, but now it’s a must [anywhere and everywhere it seems! — Ed.]. So, on that basis, purple carrots. I’m lucky enough to live above a local farmer’s market store so I always stock up on in-season, local veggies there. My current favorites are the purple carrots. They’re delicious, local, and fun!
SS: What’s your fave sweet and what’s your fave savory?
EB: Sweet is 110% ice cream. At the moment I’m obsessed with Halo Top’s Peanut Butter Chocolate flavor. I’m also in love with the doughnuts at Blackbird Donuts here in Boston. If I had to pick an all-time favorite it would be Ultimate Ice Cream’s Coffee Heath Bar in Asheville — it’s always my first stop when I go home.
I don’t really crave much savory food. However, I struggle to resist eating a whole box of Simple Mills Farmhouse Almond Flour Cheddar Cheese Crackers when I have them. They’re like healthy Cheez-Its, but I’m obviously not supposed to eat the whole box! I have no self-control around them!
SS: If you were one thing in your fridge, what would it be?
EB: Peanut butter. I think peanut butter makes everything better, and that’s my goal too! Plus who doesn’t like peanut butter?!
SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
EB: If I’m cooking it’s Banza’s Mac and Cheese with homemade barbecue pulled pork. I’m from the South and I do find it challenging to make my favorite Southern meals healthier. I love Banza because it’s chickpea pasta, meaning it’s higher in protein and lower in carbs, but it actually tastes like regular pasta [We need to check this out! — Ed.]. Then my homemade barbecue recipe is apple cider vinegar based, instead of barbecue sauce, which makes it healthier.
If I’m not cooking, then my answer is fried chicken and mashed potatoes. When I was growing up we had family dinners every Sunday. My dad would alternate between me and my sister on who chose what we’d be eating. When it was my turn, it was always fried chicken and mashed potatoes. I know it’s not healthy, but it’s good for the soul, and sometimes that’s more important.
