If you’re trying to follow a healthier, more plant-based diet by cutting out meat, you might be craving the old classics such as barbecue that don’t really have many replacements. Corn-on-the-cobb, cornbread, and even collard greens can easily be made healthier, but it’s a bit more difficult finding a replacement for barbeque sandwiches, right?!
If you’re craving this quintessential summer food, don’t fret! There’s an incredibly simple way to make a vegan pulled pork sandwich that’s just like the real thing, and there are no soy products or meat substitutes used!
Below is a recipe for a mouthwatering pulled barbecue sandwich, which uses jackfruit instead of meat. Recipe from the Minimalist Baker.
Note: the canned jackfruit must be in water.
2 20-oz. cans of jackfruit in water
¼ cup BBQ seasoning
¾ cup BBQ sauce, more to top sandwiches
4–6 whole grain hamburger buns or rolls
- Rinse, drain, and dry jackfruit. Remove the center “core” of the fruit and discard. Place in a mixing bowl and set aside.
- Add seasoning to jackfruit. Toss to coat.
- Heat a large skillet over medium heat. Once hot, add 1–2 tbsp. of oil and seasoned jackfruit. Toss to coat and cook for 2–3 min. to achieve some color.
- Add BBQ sauce and thin with enough water to make a sauce. Stir and reduce heat to low-medium and cook for about 20 min (or an extra 15 min on low for a deeper flavor).
- Remove lid and stir occasionally. Tip: for a finer texture, use two forks to shred the jackfruit as it cooks down.
- Once the jackfruit has been properly simmered, turn up heat to medium-high and cook for 2–3 more minutes to get a little extra color/texture. Then remove from heat.
- Place jackfruit on buns (preferably grilled!) and top with barbecue sauce. Enjoy!
